If you enjoy kayak or canoe fishing, here are some quick and easy recipes that really bring out the flavor of your catch.
Easy Fish FryFish fillets
1 cup flour
1 cup crushed corn flakes
1 can beer
1 egg, beaten
1 tsp. oil
1 tsp. cayenne
1/2 tsp. salt
How to Prepare: Mix ingredients minus fish in bowl. If batter is too thick just add a little more beer. Too much beer? Drink it. Dip fillet fish in batter. Pan fry in oil until golden brown.
Citrus Grilled FishFish fillets
1 orange
1 lemon
1 lime
salt & pepper
butter & oil
How to Prepare: Fillet fish. Thinly slice the lemon, orange and lime. Lightly rub the cavity of the fish with salt. Place fruit slices in cavity with a dabs of butter. Lightly oil the outside of the fish and wrap in double layers of aluminum foil. Cook on grill or open flame. Each side takes about 7-10 minutes, depending upon thickness of fillet.
Fish on a GrillFish fillets
1 onion, sliced
1/4 cup lemon juice
1 tsp parsley
1 tsp dill
Paprika
Butter
Salt and Pepper
How to Prepare: Place equal portions of fish on each piece of heavy aluminum foil.
In a saucepan, melt butter. Add lemon juice, parsley, dill and a pinch of salt and pepper. Stir well. Pour this mixture over the fish, sprinkle with paprika and top with the onion slices.
Fold the foil over the mixture and seal tightly. Leave a little space for the food to expand while cooking. Place on a hot grill and grill for 7 minutes per side.
Fish TacosSmall fish fillets, approximately 2 ounces each
Tortilla shells
1 cup flour
1 can beer
1 head shredded green cabbage
Lime wedges
Fruity salsa
Diced tomato
Diced onion
Garlic powder
Vegetable oil (for frying)
How to Prepare:
This one is a little more complicated, but delicious. Fillet fish into small pieces. Dip fillet in beer and coat with flour. Heat oil and fry fish until golden brown. Heat tortilla shells until soft. Pile on fish, cabbage, tomato, salsa and lime. Sprinkle with onion and garlic power. Fold tortilla and eat.
