Most kayakers carry at least two knives; one for emergencies with a serrated blade and a second Swiss Army style or Leatherman tool.

Useful emergency knives are folders that can be easily opened with one hand or scuba diving fixed-blade knives that can be attached to the tab on your PFD. The serrated edge allows you to quickly cut through entanglements.
